Our Go-To Roast Chicken Recipe + STAUB Cookware

Roast chicken is my jam. Something magical happens to a chicken when it is roasted in the oven until it falls off of the bone. We often bake 2 or even 3 at a time so that we can use leftovers for chicken salad, sandwiches and soup with broth made out of the carcasses.

With such a versatile food I often find myself dressing it in ways that are simple. I find in our family the kids don’t want sauces and complex flavours but rather a juicy bird that can stand on its own. We usually use salt, pepper, and stuff the cavity with fresh herbs when we have them on hand. This time we had no fresh so I opted for poultry seasoning with the S&P. Started off at 350° for 1 hour while covered and then finished off at 450 with the foil removed allowed us to have a delicious fall-off-the-bone bird that we ended up adding to our Jigg’s Dinner.

While trying to be an adult I fell into a funk with my bakeware. I want to save on dishes and be able to serve my meals in the same dish they were made in but that only works if you have nice wares, which I did not. This ceramic dish is microwave, broiler and freezer safe and can easily go between all three without getting ruined or exploding into a million pieces like some other bakeware I own. Although they are recommended to be washed by hand you can throw them in the dishwasher. staub ceramic cookware

I am going to be a bit shallow though and talk about how they look because I am crushing HARD! With the blue outside and the cream inside they are eye catching. The handles provide an easy way to hold the dish and the STAUB clearly present on the dish makes it known that it is quality ware.     I really need a rectangular dish!! the things I can make with that (like that delicious chicken dish) I can’t believe I don’t have one really. All I have is pots and pans

    The chicken looks very good, but so does that dish, I do not own anything so nice, the only dishes I have are the cheap ones from Walmart!!

    I so need this dish , hubby has blew my dishes up many times , he never listens and the next thing i know the dish is in tiny pieces all over the place , the chicken looks delish 🙂

    We don’t roast chicken too often. For some reason, we’re more likely to roast a turkey. But that looks amazing. And I love your idea of roasting more than one to use throughout the week in different dishes!

    I grew watching my mom always cooking poultry covered so I do the same thing. I don’t know why, that looks so good. I need to try different things, I’m so stuck in my ways!
