Leftover All-In-One Turkey Dinner Bowls

Thanksgiving may be done for those of us in Canada but I think it’s fair to say that our fridges are stocked full of leftover goodies. Why not use them for this delicious and easy Leftover All-In-One Turkey Dinner Bowls.

Canadian Turkey: A Staple for Festive Meals

When I finally had my own space I think one of the first times I felt I was truly #adulting was when I invited friends over to celebrate Thanksgiving and offered to make a turkey dinner. If memory serves me right the turkey was over-cooked on the outside, raw in the middle, and I forgot to remove the giblets from the interior cavity but it was a step in the right direction.

You don’t have to make the same mistakes I have now that there is so much access to making the perfect bird and all the trimmings at the tip of your fingers, thanks internet. One of the more obvious choices when it comes to cooking Canadian turkey is going right to the source, the Canadian Turkey website.

It’s All in the Prep

Whether you are cooking for family and friend or have decided to enjoy turkey in a more intimate setting you can check out tips and tricks on prepping and serving and even check out videos if you are a visual learner like me. I’m the type of person who can be explained something a dozen times and I will still forget something but show me once and I know for life.

Turkey is one of the most versatile proteins out there and can be cooked to meet many dietary restrictions, plus it’s super healthy.

A whole turkey may not make sense if you are cooking for a smaller family or maybe just that special someone. You can get may meal ideas on the Canadian Turkey website and a great tip is to head into your local butcher shop to find a cut that will hit the spot. The sausage and pistachio stuffed turkey breast roast and Sheet Pan Turkey Dinner with Spring Veggies and Herbs are great options for enjoying a delicious feast.

Planning Ahead for Leftovers

A whole turkey may not initially not make sense if you are feeding less mouths but a good roast turkey really is the meal that keeps on giving. Our turkeys are usually the main attraction at holiday get-togethers, make delicious sandwiches the next day, and eventually get thrown into a stockpot to make a delicious turkey soup. Plus the all-in-one turkey dinner bowls have now won a top spot on our leftover menu.

Depending on the size of your family you will probably want to buy a turkey that has an extra pound or two for later, we prefer to have around 5 extra pounds as we really try to stretch it out and make mealtimes easier in the coming days. FYI turkey freezes great and if you cut it into small pieces before freezing you can just toss it into stir-fry’s or soups for a quick meal.

Leftover All-In-One Turkey Dinner Bowls

These can be assembled right after a holiday meal where you have all the sides and turkey waiting to be put away. How great will it be to have tomorrow’s dinner all ready for the oven, today?

Serves: 4 – 6 people
Prep time: 15 mins.
Cook time: 25 – 30 mins.

 Ingredients:

  • 2 cups leftover Thanksgiving turkey, chopped (either white or dark meat or a combination of both)
  • 2 cups stuffing
  • 2 cups mashed potatoes
  • 2/3 cup cranberry sauce
  • 2/3 cup gravy
  • 4-6 individual sized ovenproof containers (portions will vary according to size of containers)

Instructions:

  1. Place 1 tablespoon of gravy in the bottom of each container and spread around.
  2. Layer on a portion of turkey meat.
  3. Top with another tablespoon of gravy.
  4. Add a layer of stuffing.
  5. Dollop with 1-2 tablespoons cranberry sauce.
  6. Top with a layer of mashed potatoes.
  7. Bake at 350°F (177°C) for 20-25 minutes until leftovers are heated through and potatoes are lightly browned on top.
  8. Serve with any extra gravy or cranberry sauce on the side.

TIP: These casseroles are so versatile you can easily customize them! Add in a layer of any extra veggies you might have on hand like chopped brussel sprouts, greens, sweet potatoes, carrots or mushrooms for an easy recipe twist and veggie boost. You can use this same technique with your turkey any time of year.
