Feel better right away chicken soup needs to be added to your sick day arsenal. This soup is a feel better right away kind of soup. Not a “make for a first date” type of soup, actually, I would refrain from making this soup unless you got a “ring on it” or your partner is really sick and you don’t want to make-out anyways. This will definitely make them feel better (and ward off vampires).

Since we are such a big family most of our meals are made large enough for leftovers, this soup is no exception. When we are sick the last thing I want to be doing is making three square meals a day. With congestion and sore throats slowly making their way through our family I always make a huge pot, even enough to send some to grandma’s house around the corner.

Feel Better Right Away Chicken Soup Recipe

Every time we bake chicken we keep in mind that we are going to make stock out of the carcasses so seasonings are at a minimal. 3 chickens and each with either thyme, rosemary, or sage make sure that I have a stock full of flavour and very little guess work but I digress.

For this soup, I throw a whole large head of garlic, a large chunk of finely chopped ginger and even add in turmeric for its anti-inflammation properties. I start feeling better with the prep as my sinuses start to open but it’s not until the onions, ginger and garlic are heating up in the pot and release their fragrances that I know I hit the jackpot. I spend the time to make sure that the veggies are chopped very small so that they don’t irritate those sore throats, even shredding the carrots and garlic.

Ingredients:

Oil
1 large onion diced
1 thumb-sized piece of ginger diced
1 head of garlic chopped finely or grated
2 stalks of celery diced
2 medium carrots diced
1/2 tablespoon of turmeric
1 bay leaf
1 parsnip cut into quarters
2L of chicken stock
2L Water
1/2 cup quinoa
1/2 cup thin pasta
fresh parsley for garnish

Instructions:

Fry your onions, ginger, carrots and celery in a large pot on medium heat until the onions become soft and translucent. Add the garlic and turmeric and stir so that the garlic does not burn.

Add in your chicken stock, water and parsnip and bring to a boil. Once boiling I add the quinoa and let it cook for 10 minutes before I add the pasta if I am using it.

At this point I would add salt and pepper to adjust seasonings as needed. You may also need to add more liquids as the pasta and quinoa will absorb a lot.

I serve this with fresh parsley because I love the freshness of that and especially when I am sick.

I said it once and I will say it again, I don’t want to cook often while sick. That is a torture I would only reserve for the worst people. So when we make this soup we make it with then intention of storing so we can enjoy for days. With the latches on you can trust even your smallest household members to carry the container without it exploding into a mess all over your floors.

    Soups are always never last in our house!! We love them, alll kinds!. There is nothing better than when ya have a cold or sore throat to just have some good brothy soup!!!! And also when it is a cold wintery day or night!! This recipe looks very good and I will try making this one day possibly during the holidays. Thanks for sharing.

    This looks like just what I’m looking for – I can’t wait to try it! I have to clarify though, the recipe says only 3 cups of stock? I didn’t see any additions liquid, so that can’t be right. I’m sure it’s obvious to everyone else here how much I should use, but I am no chef!

    When the cold weather sets in I love eating soups and a wide variety of soups. Right now it’s just starting to get cold and I’m ready to try this soup because it looks really good but I’ll probably put more vegetables in it like peas and maybe some corn and cauliflower. Oh boy now I’m getting hungry !

    I don’t know how it happened, or even how it started (as in why we had it to begin with), but my daughter loves Lipton Chicken Noodle soup. You know the dehydrated stuff in the envelopes? She won’t eat anything else, not canned, not homemade… it’s crazy. But as soon as she isn’t feeling good she wants it, lol.
