I am so excited to share this delicious Mediterranean turkey meal prep recipe with you and give you 5 reasons to makeover everyday meals with Canadian Turkey.

Between work, the kid’s extracurriculars and having a longer commute due to the weather, its been so easy to grab food while out on the road. We’ve decided to reign in our spending and put our health first this month and the first thing that needs an update is our meal times. Substituting Canadian Turkey as our main lean protein into our fave meals is a great way to ensure the family is well fed and satisfied these days.

For things to stick over here they have to be simple for the whole family to follow, including meal makeover planning. Its as simple as getting back to basics and cooking our meals from scratch more often. Between batch cooking and freezing meals for a later date we can simplify mealtime without simplifying taste and nutrition.

5 Reasons to Makeover Everyday Meals and Cook Smart with Canadian Turkey!

Kick off great habits in the kitchen by making over everyday favourites using turkey as a key ingredient.

1. Choose Canadian Turkey First!

Turkey is a whole, nutrient-rich food (meaning it has a lot of nutrients per calorie) that fits into an overall high quality diet that’s good for you without compromising on flavour or taste so you can feel great adding turkey to all your meals and snacks. Swap turkey for any protein in all of your favourite recipes for a lean choice. Don’t forget – with turkey, even dark meat cuts are lean! This means you’ll get big, tasty flavour with a juicy bite even in the healthiest recipes. With ground turkey or turkey thighs available at your local grocers, swapping turkey into any recipe is a snap!

2. Practice The Art of Batch Cooking!

Batch cooking can save you time, money and help you avoid reaching for take-out foods. Cook up a larger quantity of your family’s favourite dishes or consider cooking up larger quantities of key ingredients that you can use as building blocks for quick meals on busy days. Turkey is a versatile ingredient that can take on a new life in each recipe when you change up the spices, marinades and sauces. Think about choices like turkey chili, turkey curries, turkey meatballs and turkey soups, which are great candidates for batch-cooked meals.

3. Put Your Freezer To Work!

Use your freezer to stock up on your family’s best-loved recipes. Breakfast, lunches, dinners and snacks can all be made ahead and frozen for a quick solution when you’re short on time. Make sure to use clear containers so your meals are easily identifiable and label each with a date and name. Turkey is tasty and juicy, making it the perfect candidate for freezer-friendly recipes that taste even better when defrosted, reheated and served.

4. Use Tools That Make It Easy!

These days there are so many appliances available to help you get your meal prep and cooking done in record time. Slow cookers, pressure cookers, tabletop grills, and pans for one-pot meals are all readily available. These kitchen workhorses will help you prepare your daily meals in record time, freeing up extra time on busy days. Now here’s a great idea – cook a whole turkey so you have extra on hand, ready for weeknight meals, lunches and snacks. You will end up with both white and dark turkey meat, perfect for use in a variety of different recipes. You will also have a large supply of turkey bones, the perfect base for a rich stock or multiple soups. The economies of cooking a whole turkey will surprise you. Once you see how many dishes you can create, you will be shocked at how little each meal costs!

Mediterranean Turkey Meal Prep Recipe

Prep time: 30 mins.
Cook time: 15 mins.
Serves: 4 – 6

Ingredients:

1.5 lbs Canadian turkey breast
1 ½ cups green beans, cooked
2 cups Basmati rice
2 tbsp olive oil
8 tbsp tzatziki sauce
1/2 cup plain yogurt
1 tbsp lime juice
1 tsp each: ground cumin, turmeric. coriander seed and thyme
1 lemon sliced
salt and pepper to taste

Salad:

1 cup cherry tomatoes, sliced
1 cucumber, diced
1 tbsp parsley, chopped
2 tbsp apple cider vinegar

Directions:

Slice turkey into 2-inch slices.
Mix yogurt, ½ the spices and the lime juice together to make the marinade.
Marinate the turkey for at least 2 hours.
Heat 1 tbsp olive oil over medium heat. Sear turkey on both sides and continue to cook for 8-12 minutes until cooked through and no longer pink. Once cooled, cut into chunks.
For the rice: add the remaining spices to the cooking water and cook rice according to package directions.
For the beans: sear green beans in a non-stick skillet over high heat until gently browned, 2-3 minutes.
Recipe can be made ahead and stored for up to 3 days at this point.
For salad: mix together cucumber, tomatoes and parsley. Dress with salt and pepper, remaining olive oil and vinegar.
Assemble the lunch box; add rice, turkey, green beans, salad, lemon and tzatziki.

TIP: Mix up your lunchbox flavours by changing the marinade for the turkey, trying out different grains instead of rice and mixing up the side vegetables you use.

Love meal prepping with turkey. I make turkey meatballs and use them in my pasta sauces and sweet and sour meatball entrees. Chicken Fried rice in my home is substituted with turkey instead and I meal prep that meal in batches for work lunches. The recipe above sounds delicious, can’t wait to make that for my family!
